- 2 lb salmon, sliced into filets
- ¼ cup sake
- ¼ cup mirin
- 6 tablespoons white miso
- 6 tablespoons sugar
- fresh chive, for garnish
Direction
- In a small pot over medium heat, add in the sake and mirin, and let simmer for 2 minutes.
- After 2 minutes, add sugar and miso. Let the mixture fully emulsify and set aside to cool, about 20 minutes.
- Place your salmon into an airtight, sanitary container and add in the cooled miso mixture, making sure all of the salmon is coated.
- Marinate the salmon in the refrigerator for one day, or at least 12 hours.
- After marinating, place salmon on a baking sheet lined with some parchment paper and broil 6 inches away from the heat source, for about 6-10 minutes until cooked to your liking.
- Serve over a bead of rice or desired grain, and garnish with chives.
